When the restaurant calls to ask us to shoot for them, we end up interviewing them to see how ready they are for the shoot.  We ask them for a shot list, what they want to shoot, how many shots, and then we start asking them about the restaurant, if we are unfamiliar with it. Such as asking if they have good natural light, we will need to bring lights to do the shoot.
